I have Peterbilt 365 Truck with Cummins ISX12. I always have a problem that the soot is build up quickly and the warning lite is on. After the engine starting to shutdown every 30 min. So I have to make regen manualy or by Cummins software but again soot build up maybe after on day or a week as max.
In my country we used high sulfur content in diesel
I don't know if this affecting on the engine

It could be time to clean your dpf.

High sulfur diesel is a no go. Looks like it will need a dpf cleaning/replacement as well as checking for excessive soot leaving the engine. If you are going to continue to use the incorrect diesel might as well remove the troubled parts.

Careful deleting the DPF period you can put yourself in a bad position that I'm in now I've got a 13 peterbilt Jake and cruise issues stability control light on and someone changed the ecmu in the unit that I bought at auction and now they want 20 to $25,000 from peterbilt who is the only one that can complete the work to reinstall it before they can work on the truck

Considering OP is using high sulfur fuel I'm pretty sure his country has no emission regulations to worry about.
