How often can you workout on the road. I know it's hard to eat well on the road tho it is possible. I just don't want to develop the beer belly or man boobs lol. I want to bring a jump rump running shoes and workout mat since I do yoga. I just want to maintain some healthy habits while on the road

Get a gym membership to a frachise gym like LA Fitness. They're usually located at malls, so should be plenty of parking for a big rig.

See a lot of small gyms in truck stops.
At a Petro in Atlanta right now that has one. -
Pretty much any bodyweight exercise you can do and will be very effective. For everything in between get a set of variable weight dumbbells. All of that together you can exercise almost any muscle group. Plus you were thinking about averitt, I know a good bit of there SVC's have exercise rooms.

there are ways if you look, running/bike trails, parks, etc that you can find near truckstops with google maps,utube videos with ideas, if you do enough searching its out there. there is even a Facebook page called "truckers with bicycles". as far as eating there are always choices, they may cost a little more but..
"if its important enough youll find a way,if not you'll find an excuse". good luck -
Don't know if you have two bunks but you can do pull ups off the second bunk, (mine you can anyway. You do have to cheat, by putting your feet on the bottom one so you don't bang your legs up. Which works well if you can't do one with all arm and back strength. Just try to use progressively more upper body as you do them and you won't need any leg power eventually.
But any good routine with calesthinics and plyometrics can serve you well -
