I'm interested in acquiring a Kenworth for step deck work. Is there any fuel efficiency advantage to a T2000 compared to a T800?

The T8 isn't on the same playing field with the T2 plastic truck when it comes to quality.
As for MPGs I'd imagine if driven right and comparable power trains there wouldn't be a lot of difference. -
good luck keeping a T2 running, IMO your better off with the T-800..

My 98 T2...
I'd be driving down the road & the driver's door would pop open under it's own power.... Finally put new latched in. But it still tried to open. I had a gap between the door & the cab once big enough to slide my hand thru. -

T800's a way better truck! -
Yes, there must be a reason that, other specs equal, the T8 or W big nose holds its resale value much better than the T2.
I'll have some highway work but mostly moving smaller equipment in and out of resource roads. The T8 has the most spec options and makes the most sense.
