The top may be all you need, but wind gets under it with an open front.
The only two loads of onions I ever hauled and am ever going to haul, you needed to at least leave the front part way open, even roll the sides up too.

 

True and when I did super-sacs or onions I folded the tarps to the first or second set of rings and left between a foot or so open for cooling and that was one of the few times the straps were over the tarps. That stopped the blowing tarp problem. I also tarped to the front and around and folded the flap over the top so that I could cover the front and back if I run into rain or snow.

 

I hauled a lot of supersacks of Bentonite. It has to be tarped to avoid leaving a contrail of fine dust behind you. I only had 8' drops, which was a major PITA. Only the tops of the sacks, at the opening, needs to be covered. As long as the front edge has plenty of down force it should stay in place.

 

I hated tarping that junk. I only hauled it a couple of times, but it got on my tarps both times. lol

 

If you haul a lot of sacks, best to have a pressure washer at home.
