Took the time to prep some meals before I head out on the road.

    Made some scrambled eggs with sliced boneless pork chop and pepper and onion.

    Made some Cauliflower Fried Rice with same leftover pork.

    Also some Beef sausage and peppers and onions.

    Found these small vacuum sealer bags which are PERFECT for single meal prep.

    All I gotta do is just toss then in the microwave!

    That’s awesome. It’s impossible to beat real food. Best thing I ever did was buy an Instant Pot for the truck. You can do so much and so quickly with it while on the road.

    Sunday I cook about 3-4 chicken breasts, 16 eggs or so, and some frozen bags of veggies.

    Microwave 30-90 seconds and those low carb 35 calorie tortillas and boom

    As I run out of food I switch to turkey cheese sandwiches.

    I just started with cooking in the truck. Yes I fooled around before with a George Foreman grill. Bought two other ways to provide fire to a pot or pan. Haven’t used them.
    Now I bought these provided meals shipped to my terminal. Disappointed at first. Thought they would be heat and serve. Nope. They provide everything and how it’s to be cooked. On second thought. That results in healthier fresher food.
    I tried using my lunch box. No. So I bought an Insta Pot. The 6 quart size. I threw everything in. Added what looked like appropriate water. Set it on slow cook. With venting. Cooked for 4 1/2 hours. Then went to keep warm for 6 1/2 hours. I’m surprised. It tasted good. Healthiest meal I’ve had on the road.
    Part of this was so many restaurants not even serving any vegetables anymore.
    Meals in restaurants over $20 now. Getting less.
    Had to do something.
    I’ve got a bunch to learn. So far been lucky. Glad I got the InstaPot.
    BTW… I only get home once in three months at best.

    Instant pots are awesome. Buy a chuck roast, some carrots and potatoes. A few spices and a bit of flour and you got an awesome home cooked meal. You can get watch YT for a million different ways to cook.

    I started doing way more home prep and seal a meal
    Instant pot works better than a microwave and if you have an Apu and room for it. I would get a small cube freezer
    I had one in my last truck. Put it up on the upper bunk
    Was able to freeze enough food for 6-8 weeks

    Might have to unplug it when running a microwave or instant pot just so it all didn’t kick on at the same time

    I love my Weston vacuum sealer & bags.
    Assuming you have time when you're home to meal prep, it's exactly what i was planning on doing OTR.
    Don't know about microwaving. Never tried that. I use an Anova Immersion cooker (1000 watt Sous Vide) at home. Set the target temp (always 165 for leftovers) and forget about it. Doesn't matter if you over warm it time wise. Tastes the same!
