There is one thing I want to caution you on when it comes to expanding your perishable food storage. That is breakdowns and hotel rooms.
You'll need to run a test to see how long your stuff will operate with the engine off. Do this at home so you can easily jump start the truck with your car. Let the truck sit for a day with the engine off and everything else still running. If the engine still starts easily, let it sit a 2nd day, try again. You also need to know how long stuff will stay cold/frozen with the units turned off, and they will last a lot longer full of food but it largely depends on outside temperature.
You need to know how long stuff will last in the truck in the event of a breakdown. Need to know how long you can let the fridge/freezer run, and how long the food can last with them turned off. A simple breakdown may be nothing to worry about if you can be back on the road after a day or two.
But if you will be down longer then your food will last then it is time to look for a hotel room. This poses more problems. I got a huge wheeled duffle bag just to use to take my food (and crockpot or skillet) to a hotel when needed. But, hotels have tiny dorm fridges and you can EASILY have too much perishable food to put in it. I just spent 10 days in a hotel and my chest freezer alone was bigger then the hotel fridge, and I also have a standard truck fridge. Turn the hotel fridge to max and cram it full. You might also need to walk to a store and buy a cooler to fill with ice to keep stuff in that is ok at warmer temps like condiments and precooked chicken as long as you eat it right away.
Precooked stuff is generally ok if it thaws and refreezes as long as it stays cold. But things like raw meat need to be cooked and eaten first if it can't be kept frozen, especially if it is already old.
Don't be surprised if you end up loosing some food. All you can do with stuff that should be frozen is smell/taste it and decide if it's still good. You are basically racing against the clock, try and eat what will go bad quicker first.

Fridge compressor can not restart after power was interrupted due to cranking or microwave use.
As a result compressor motor starting coil burns or start relay.
To prevent start overload unplug fridge before cranking, use other load which can cause 120 v power to drop.
Plug it back after at least 5 minutes.
Fix 12 v circuit, replace invertor.
Install delay relay to delay fridge power on.

I have a brand new 2020 Freightliner, also purchased a brand new 3000 watt inverter that was installed by thermoking. I haven't had any problems with the inverter powering the other items in the truck. R u saying I need to unplug the fridge from the inverter every time I use the microwave? I assumed with a 3000 watt inverter that was enough power for both considering the microwave won't use constant power like the fridge does. The first fridge had water pouring everywhere, I never found out what happened to it. This one I think the freon leaked out due to the roughness of the road and etc
