Not all truckers take time off for Christmas or Thanksgiving or New Year.
I never have taken that time off either, but that's a personal choice.
You won't have any problem finding a trainer to run through Nov/Dec/Jan, especially with refrigerated companies.

Can't speak much to flatbed.
For the refer and dry van side there is a seasonal up tick in demand for the holidays.
Dry van will see a slowdown staring about solstice. Less slowdown on refer.
Markets tend to come back Feb to March once the accountants tell buyers how much stock to buy.
My understanding is flatbed follows construction rather than retail cycles.Chinatown Thanks this. -
I completed my cdl school in August of 2018 and didn't start with my first company until January of 2019. I was in contact with them starting in November of 2018 but they weren't hiring/training until after the holidays. They completely understood the desire to find a good fit in a company and that takes time to makes calls and decisions. New career should take your time and think through all of your options.

When I started with Roehl I took 6 weeks between school and starting. They said 60 days was OK. After that I would have had to take a refresher course with them. They paid to train so it would not have been a big deal.
