The induction cooktop stove will likely require a pure sine wave inverter to heat up, so he may not be able to use that appliance. Pressure cookers I've always thought were useful for cooking quickly or high altitudes. If he's sitting in the truck all day, I'd think he could do just as well with a slow cooker.
We use a 4 in 1 Ninja crock pot. It acts as a stovetop, oven, steamer, or slow cooker. Maybe look into that as an option. We bought some of those giant rubber coated flexible ties from Home Depot to help hold the lid on top while moving.

There are great threads on here... just search "cooking in the truck" for recipes, equipment, inverter requirements and anything else you could want to know. We use:
12" electric skillet
4 quart crock pot
Coffee pot
Truck fridge
And sometimes a 750w microwave.
Our next purchase will be a Traeger portable smoker. I contacted the company and it doesn't draw much at all. But it's bulky. And you have to carry pellets. Great for reset days.Jazz1 and hoosiergirl Thank this. -
1.5qt (don't pay that much for it) slow cooker for any bean soup, chili, steamed fish/veggie packets etc.
Microwave-cook rice, oatmeal, steam veggies etc.
2 burner Coleman camper propane stove used outside at rest areas, certain customers sites and any of our yards.
Small toaster oven with 8"skillet and square Enamel pan is the work horse. It usually cooking while I'm driving.
Company fridge, small Dometic freezer, electric teapot and 1800watt inverter.
Freightliner top bunk is the pantry.
You didn't ask but I'll add that I do 10-15min yoga (no equipment needed), jump ropefor 6 rounds and "10 daily exercise" app that helps keep me limber.csmith1281, Cerberus XVI and hoosiergirl Thank this. -

I've really gotten to love my little aroma rice cooker. Brown rice, black beans, and turkey sausage with steamed broccoli. I've been losing about 3 pounds a month since I started using it.
Really easy to keep the ingredients for me and every grocery store stocks them.hoosiergirl Thanks this. -
I've got a KitchedAid stand mixer in the truck, too. Just a cup of flour, an egg, and a dash of olive oil and I've got fresh pasta dough to run through the attachments. Just keep in mind that the more complex you typically make cooking, the more tedious it becomes to clean up.

Thanks-Hubby also mentioned getting a Coleman stove awhile back and I forgot to add it to the list.
I'm glad you mentioned exercise. He's going to bring some smaller hand weights 5 & 10 pounds but I didn't think of Yoga. I'll introduce him to Yoga this weekend and hopefully he'll like it it. I think it would really help with the tension from sitting most of the day. I've also suggested the tension exercise bands but have no idea if there is room/space for that. If it were me, I'd bring a bicycle as I'm really into cycling but I'm not sure if that's feasible either.

I'm a bit concerned about the cleanup so we're planning on extremely simple meals until he gets the hang of things and knows what he has time and motivation for.
He's not really as into cooking as I am so as long as he has an electric skillet/grill for burgers I think he'd be good most nights, lol. Breakfast and lunch shouldn't be as difficult.
