Yes brisket is fatty... And tough.
In my opinion the only way to cook brisket is to slow cook it, otherwise you wouldnt be able to chew it... Too #### tough!!!

Couple of things about Brisket. It is the chest muscle of the animal. It is a working muscle. Working muscles tend to be very lean, not a lot of fat marbling in the meat. Very lean meats tend to have strong connective fibers. These fibers are best cooked low and slow. It takes time to break them down. Moisture helps. Part of the reason you baste them during cooking. Brisket does have a fat cap, it is a dense fat. Not good for rendering. Generally the fat cap is trimmed down to about 1/2 inch or less.dwells40, homeskillet, austinmike and 7 others Thank this. -
