Part two of the smoked brisket cook is almost done. Current temp is about 199 to 200 so it’s gonna probably be another 30 minutes getting it to the 205 to 210 range. For part three of the cook will be to pull it from the smoker un wrap the foil then re wrap it in plastic wrap to seal in the juicy meat then put the foil back on it and put it in an ice chest to keep it warm and let it rest for 6 to 7 hours.
