    1 lb good quality pasta. Thick spaghetti, fettuccine or linguine. Your choice.
    4 whole eggs.
    3 egg yokes
    6 Oz good quality parmigiana.
    8 to 10 Oz pancetta. Should be guanciale for traditional.
    Black pepper.

    In a skillet, Slow cook pancetta to browned, but tender and as much fat rendered as possible.
    Separate renderings and meat into dishes.
    Put the eggs and yokes in a measuring cup. Beat eggs, set aside.
    Fine grate parmigiana cheese, 6 or so ounces, set aside.
    Bring 6 to 8 cups of water to hard rolling boil. Add 2 tablespoons of salt to water. Stir and let come back to boil. Add pasta. Cook pasta short. If package says 12 minutes, cook 8.
    At the appropriate time drain off 3/4 of the cooking water into a bowl. Put pasta back on heat.
    Add the renderings from the pancetta. Use some of the drained pasta water to temper the egg mixture, a few tablespoons at a time, stirring constantly. Should double the amount. Reduce heat on pasta to low, start adding egg mix slowly and stirring constantly once all the egg is added, start adding cheese, a small amount at a time. As it thickens, add pasta water from bowl, then some cheese, some water. The idea is to add water to make a smooth sauce. It might look thin, thats ok as the cheese and eggs mix and melt, it will thicken. Add fresh ground black pepper to taste.
    When the pasta is tender and a nice smooth sauce is covering the pasta, put in a dish, top with the pancetta meat. Eat.

    I don't know chorizo is made of pig. It seems very crazy to outlaw bacon. How do you raise pigs "humanely"? Lol, send them to iner city schools? Then harvest them when they shoot each other. Ok, seriously how much room does a pig deserve?
