So, I have a horrible work history. I haven't worked since I got out of the Marine Corps in 2011. I've done a little college, a little jobs as a security guard here and there, but I have under 18 months in my last three years. I am unhirable, apparently Except for companies like Swift or CRE. I am currently in a 5 month CDL course... I'm looking at going to UTI and doing their 45 week Diesel Mechanic school. That would put me well over 18 months of verifiable at the end, and I'd know a lot about everything having to do with trucks at the end. What do you guys think? I'd be using post 9/11 GI Bill for it.

That would be a dichotomy.
Knowing how to rebuild a truck engine with spool wire, pliers and parts and be unable to do it as just a Company Drivah.
All they really want is just a accounting of your time going back up to 10 years if necessary for homeland security purposes. If it was me going back out, I would put down Medical patient and be treated as a flat newbie. However my experience will become apparent extremely fast.
IF it is a truck mechanic you are going for then after you get your certifications at the end of the course your prospect should improve. -
