Take veggies from home already cut up and in zip lock baggies. If you do a little prep work before you leave the house you could cook meals for a week or two that were literally just dumped into the crockpot, stirred with with spoon to thoroughly mix together, then forget for 5 to 10 hours while you drive. Each crockpot full could probably do at least 2 meals, even if it is a smaller one. Now that I have an inverter I am considering this for myself.

Ha ha! Case in point. Right now, ones not working. The other ones getting me by. I did some research. Doesn’t matter, you can hook as many as you want directly to a battery/ battery pack. Some inverters are able to be wired in parallel. Must be same size. Benefits are one inverter maxes out, other one picks up the extra. Actually draws less Power supposedly from power source than one Inverter twice th size of each. Interesting stuff. Way over my head. I’m sure you being an electrician have a much better understanding. I do like the idea of a backup plan. Kind of like alternating kitchen counter receptacles on different circuits. Keeping lighting separate. Even the drain in my kitchen. I put 2 separate traps for each side. If one plugs while I’m gone, the other side still drains. I mentioned before, my stepfather, a retired master electrician, ran his 1600 sq ft house for weeks after Katrina on 2 small generators, instead of 1 larger one. In case one goes down. He was constantly filling them with gas. And changing oils, always had at least 1 running. 2 inverters seems like overkill, I agree. But having a 3000w, that doesn’t get used to capacity is also overkill, it seems. Since the inverters themselves draw 10% of the power drawn to run on. The defense rests, Lol. I obviously don’t know much about electrical. Lol, just experimenting a bit. Putting old ideas to use. But as far as safety is concerned. It’s safe. That’s top priority.

They’re the Yrllow power drive from Pilot. Old style cases, no Bluetooth. They were at the flying j in Dothan on clearance. Owned by road pro. Actually have pretty good ratings/ reviews. Apparently they’re decent products. I had a cordless road pro dc drill once. Lasted forever. Finished my electrical on my last house, drilling holes, after burning out two other drills, Lol. I’ll probably get the harbor freight 2500, keep the 1000w for now. I just made another pot of coffee with it. No smoke. I’m confident, even if it smokes out, it won’t start a fire. Wiring/ fuse is correct. Just surprised me, Lol. I was ready to get the fire extinguisher out!!!

At the risk of sounding like a negative Nancy, I would propose that MOST of you don't know enough about electricity to be jacking with it.....save @Dave_in_AZ .
This would be my suggestion, take it to someone who knows what they're doing. The wish/hope/try/try again coupled with advice from strangers that might actually know LESS than you do about it, might end up being a very expensive proposition.

Electricity. It's a French word. Loosely translated it means "don't **** with it".

My public service announcement for the day.
    You're welcome.

That’s my plan. I mentioned my aunt. She’s Cajun, always has onions, peppers celery chopped and frozen. Ready to go.

Lol, so true. But much more fun to figure it out. Electricians say it’s not a hobby. Lol. True, but simple stuff can be done safely.

Choice "B", if you're planning on turning your truck into a motorhome, get a gas powered generator and put it on your catwalk and run a big wire through the back to a proper electrical receipitical.
I just bought one for the house for $375 from Walmart. All the power you'll ever need at half the cost of stringing a wad full of inverters together and safer too.
