    I thought about using paper for the "Texas Crutch" part of the cook a lot of the better BBQ joints have moved to butcher paper. I'm thinking during the 2nd part of cooking foil creates a better "boat" to hold the meat juices and creates a suis vide atmosphere around the brisket, while paper lets the juices evaporate off. My favorite BBQ joint is Snows BBQ in Lexington TX and their pit master Tootsie still uses foil.

    Sorta serious query... Figured loaded/pulling. Quiz was one to come back empty in.

    I have said I quit J.T. Garrard due to fleet change. Fleet had (All IH) 3 R220- 8 spd RR, 3 V195-8 spd RR, all less than 2 yrs old.. Then several L195 from 4 to 5 and 1 L190 (#12-Fully rebuilt,) my first trk there. My V195; governed as I drove it out of Ft Wayne, would top out at the 0 of 70, on US49, in the MS Delta, Clarksdale to Greenwood with 400 (100 lb) bags of cottonseed meal on a flatbed. Buckeye Cotton Oil mill going home...

    They were going to all R 190, 5-D spd/2 spd, gov at 2750, 5.57 rear.
    Speed was not my concern. Ole #12 5th OD would run up about 58. I kept it there as long as OD could turn it. But mostly rolling light/empty or back in 4th dragging. Big gap down to 3rd. So I drove 6 to 8 hrs straight to get anywhere....
    With the V195, I could get out with the same weight, and run a steady 55 (speed limit was 45) same route/same time and be way down the road. Power to cruise the load.
    For the almost 2 years I drove that truck, I would be running say 4 AM; sleep till sun fully up, and go again. Make miles and sleep.
    My thing was not top speed, (most roads then you could not hold in the road above 55)
    but to be able to get in; run 6 to 8 hours, break for fuel/food/traffic and be down the road making delivery and nickels.
    So, I quit because I would be driving "harder", sleeping less, and overall losing income.

    On your way down to Lexington; go straight thru Palestine and, eat as Shep's BBQ and Catering. If you get in there when a couple of local cops are in; and he is slicing for them, you will need help toting the plate to your table. (Or was, long time ago- 2015)
