We use an Aroma and Grillet. Can cook just about anything you want. Also, we have a reg refrigerator on top bunk. Its the one with separate freezer and fridge. Costs about 129.00 at Wally World. As for the coolers, we have used both Colman and Igloo. Hands down Igloo is larger and more reliable in my opinion. Last but not least, on FB groups, look up Big Truck Cooking. It has tons of info, from recipies to appliances to wattage conversions.

I watched a guy at the Petro in Fargo cram, and I mean cram, a raw roast into the microwave inside the store there.

I like our George Foreman, except for the leakage from juices, so husband got a piece of wood to attach to the low side and put screws in the bottom like little legs and it made it a lot less messy. The heated top and bottom was good to cook most any meat or vegetable in. Made skewers with veg/meat/fruit. Should have maybe gotton an electric skillet I guess.

I’ve cooked beef in the 12 volt lunch box cooker quite often, but I’d never take a roast into the truck stop and cook it in their microwave. In the first place it wouldn’t be very good. In the second place before it was done you’d have several drivers all lined up tapping their toes wondering when you’d be done. I’d rather have a hot dog and be done with it.

I know it was covered in this thread a few years ago but I'm looking for updates opinions on using an alchohol based or sterno stove in the truck to cook on those bitter cold nights (really any time but I'm picturing Fargo in January).
I currently have a toaster oven which is fine but I can't make things like scrambled eggs or strips of chicken in a timely manner for instance. Thought it might make a nice addition without taking up much room. Thoughts?stacks Thanks this. -
