Provided there is nothing wrong with the unit, run the temp down in stages. Runs on slow at 0, take it down 5 degrees at a time until you get -20

That's a great idea. I find that particularly in hot weather, as it's working to get the temp down, it goes into DF mode then I lose ground. Takes a good 20-30 minutes to get back to where it was before the DF started.

When it will keep running on slow speed then drop another 5 until at temp. It will have to defrost as it comes down.

Mine seems to kick into high speed when it gets to 5 or more degrees over the set point, so maybe I should adjust it down 4 at a time until I get it to -20.

I do a lot of frozen but usually just run 0 or -5, ice cream or some dough products have to be -20 but I don’t touch those.

In temps of 104 degrees outside, it's going to be impossible to get it to 20 below. Unless its ice cream, I would have ran it at 10 below in transit. Once I got close to delivery, then I would turn back to what was expected. 20 below makes the reefer work too hard in those conditions and you'll burn a ton of fuel. It will come on every half hour or so at 10 below. I dont really aee how 20 below is any colder than 10 below.

try that with some of these ice cream loads and you're going to end up buying it.

some of these places will spoil the shipment before it ever hits -10, ice cream is cured at a cold temperature and once it is temperature cycled it will start losing the creaminess.
    High dollar sensitive stuff.

They had a cold doc, but after they finished loading, my box temp was +15, so I don't think they would have too much trouble with -10.

No doubt...ice cream is the one thing you better not take any shortcuts. You better run the that reefer, and you better get it where it needs to be quick as possible
