I have a 2019 Kenworth t680 with Paccar engine.Coolant light and red "stop" light came on but coolant is fine. Not overheating. Any ideas?

It’s gotta be the sensor then. Start by unplugging it blowing into it maybe and seeing what happens.
Then at next kw dealer get a new one and replace it.
Start there

Pop hood. Check overflow tank first. If it's empty put some in. Computers will not tolerate a empty overflow tank. You have to have coolant partially up there. You will find it against the firewall. -
Feel the lower radiator hose and make sure coolant is circulating after you check level.

These new freaking paccar Motors and The Surge tanks will a trigger the sensor if it's like an inch low. And most likely if you got more than or around 300,000 miles the whole tank and the sensor will need replacement per pack car protocol.

Last week I replaced my coolant reservoir, which included all new caps and sensor, yesterday I got a shut down alarm. Low coolant level. Checked, level fine.
I pulled the plug on the level sensor, still had a check engine yellow light, but at least I was able to drive it home.

I have a 2019 T680 with the same problem. I hacked a solution to the problem with a magnet and 2022 version of baling wire. All alarm lights and sounds are off and truck runs fine. Just do your precheck and eyeball the antifreeze reservoir, keep an eye on your engine temperature gauge and use your nose to sniff out any antifreeze odor. You don't need no stinking low coolant sensor. Pics are attached.
