I don't believe I have ever heard the term "gaylord" before. I assume a bin of some sort like watermellons are hauled in, but they would have to be well vented.
Hopefully I don't regret asking; what's a gaylord?

We hated Gaylords at the post office during the holiday season. Overfilled and old, crumple while you're either unloading them or while you're driving.

Like @Oxbow mentioned, onions need to breathe. They will digest themselves if you don't keep air moving while in transit. That's why you see them only top tarped on a flatbed. We used to haul them in a dry van at Poly, but they needed to be vented plus the onions were in mesh super sacks so they could breathe. A gaylord wouldn't give enough air movement.
