Electric skillet is a versatile tool that can be used different ways.
Costco sells cooked pulled chicken.
Stir fries. Grilled sammies. Make soup. Quesadillas. Cold meat n cheese rollups. Tuna snack packs. Tacos. A few premade meals for when you just don't wanna deal.
Make 1lb sloppy joe meat and eat half; freeze the rest in Ziploc. Microwave and plop on buns.
Keep taco meat around...use for burros, salads.
Hot dogs if you buy decent ones.
Some protein, something green, limit carbs. Smaller portions.

Really need that small freezer that'll let me keep more stuff on the truck that isn't processed dry foods. My fridge is decent sized but awkwardly laid out so you can't fit a ton of stuff in there. -

When I was over the road more I used to keep a small crockpot in the truck. I made all kinds of chili, soups, Stirfry, pot roast… Among other things in that thing. The worst part is having to drive all day with that good smelling food cooking right next to you! -
