Usually when you touch the clutch, there is a switch on it that kills the cruise. Same with the brake.
She will come out of cruise when you make a shift. However, there should be a resume so you can trip that toggle once you get back into the right gear for resuming a certain speed.
Cruise works all the way down to 35 mph. Most all my trucks since 1990 had cruise of some kind on them. Moved away from the spring toggle trigger and stick system on the older ones without. -

Cruise on a manual transmission in a truck just holds the RPM's at the set amount, nothing else (some newer trucks have more controls like auto-Jake's and the like). It's used for high-idling and holding speed on the highway.

manual transmission trucks have had true cruise controls that control speed and jakes for more than 30 years
