Think it would be a good move to have def removed from truck?

Otherwise you are setting yourself up for a nightmare in several different possible scenarios. -
What are the possible scenarios?

1. You take your truck to a shop that absolutely will not do any work at all to your truck without replacing/repairing/enabling the DEF system to full function first. Those systems can be tens of thousands of dollars. Then you then risk them reporting your truck, which they might do if you refuse to let them do the work. In essence either you have to do all the work yourself, or get Cletus the Shadetree Mechanic to do all the work on your truck.
2. Law enforcement notices your truck has been illegally modified. That can easily turn into a gigantic mess with tens of thousands of dollars in repairs (to make the truck legal) mandated by a court, plus whatever penalties you are responsible for due to owning/operating the truck.
Really, it's not worth it. If you want a truck without DEF, buy an old one that never had DEF. -
