I worked in heavy construction for many years. Often I would arrive early for work and cook breakfast right on the tailgate camping style. Little propane 1 burner stove, 10 inch cast iron skillet. Throw some bacon in there fry it up and set aside wrapped in paper towels. Next break some eggs in skillet using the bacon grease. Add a splash of milk. scramble up nicely, when they are almost done, put in some mashed or baked potato to warm up with them along with the bacon, sprinkle some prepared shredded cheese, diced tomatoes and onions from the ice cooler, shake some pepper and splash some hot sauce-- voila, breakfast! Meanwhile the guys would be standing around drooling with the breakfast smell permeating the air. Choke all that down and chase with a big chug off the milk from the cooler and pour a cup of coffee from thermos and attend the day's safety meeting![]()

Go for natural food with minimal processing.
Avoid enriched flour, sugar or it's chemical cousins like HFcorn syrup, Sucrose and all those others, high fat and sodium nitrate in meats, and salty foods.
Get brown rice and sweet potatoes, not white, real fruit and veggies not canned or frozen.
As an adult you need to figure out what you like and what is reasonable to take along with you. An example is my guacamole. It takes me a half hour just to prepare a bowl of it. Dice the avacado, chop the garlic, serrano peppers and cilantro, squeeze a half of lime and then it's ready to dip. It's a belly filler and good for you. The salty tortilla chips maybe not so!
Walk around the grocery store and just look at everything and pick something you never tried. I just discovered the benefits of ginger root a few weeks ago. I thought heck a little chunk of root is cheap, I'll try it. I made tea with it and it got rid of a headache and back pain and makes me sleep good at night.
I've been eating out in the woods off of the ground for the last week. The persimmons are falling here in TN! Got some big puffball mushrooms out in the yard begging for the skillet too.VisionLogistics Thanks this. -
I read all the replies for good ideas , and then I remembered what happened when I use to pack a big lunch and drive all night ( 5 nights a week linehaul turnaround ) Iwould get so tired an hour after I ate it , use to really make me mad I couldnt stop it with proper rest during the day , only thng that made it stop was when I stopped eating lunch in the middle of the night and just started eating a BIG meal before work then a banana or piece of fruit and a few bottles of water , never had problems after that even when I messed up my sleep during the day. Sorry for the comment I know thats not what you were asking about.

It may not be what they were asking about Azcannon, but it is a very good point. A big heavy meal in the middle of your night time, (or for that matter, day time) run will just make you sleepy.
Cheese and crackers. Slim Jims or Jerkey. Of course fresh fruit is great. Just enough to put something in the belly so you don't run out of steam. -
A fried egg sandwich with ketchup or mayo or with cheese if you want and bacon on toasted bread. I guess it could be assembled later on if stored in separate containers or baggies.
Home made rotisserie chicken where it doesn't have as much salt as ones from the store.
Cold baked potato with salt and pepper.
V-8 Fusion
Varied nuts including the soy type, just not too many for calorie sake
Cold cereals, like the strawberry in the middle mini-wheats, make a good munchie too.
Chex mix oreo cookie and muddy buddies I believe is what they are called. The have little powdered sugar on them and are good.

My wife always makes big meals when I am at home, the left overs go into those little trays and down to the freezer. I'll grab six of them when I leave again, heat them up in one of those little lunch box stoves. I have also ordered pizza on the road, have it delivered, eat some and bag the rest, put it in the cooler. I don't care for cold pizza so I put some tin foil down in the stove and can heat up two slices at a time. You can heat up hot pockets in there also, just keep flipping them. Have heated up hot dogs in it, made fried bologna in it. Made hot ham and cheese with it. Your imagine is the limit with those little things. Well worth the $20.

Don't forget brown bread like pumpernickel, it even has one made with raisins in it now and no fat, even peanut butter is good on it.

Did I miss something? You buy an Igloo 12v refrigerator, $100, and stuff it with anything you want. Breakfast cereal and milk, whatever works for you. When I reset my 34hr clock, I roast a small beef or pork roast, slice it up, have terrific lunches for about a week. No matter what, the truckstop food will kill you, in so many ways. Although if you come across a Chester's Fried Chicken outlet, be sure to give them a try!
