Turn it over to your insurance company and do what they say. Going to be a long drug out fight no matter what.

This is why we have cargo insurance, and why most of my reefer loads are chilled and not frozen. Frozen goods are a PITA to deal with. As long as you can verify the logs from your reefer and they show it was set at -10 and was working properly, let the insurance company do their job and handle the claim. In the meantime, find out if the shipper wants the product back, and if not let your insurance carrier determine what should be done with the product. They own it now so it belongs to them.

Never roll through the gate with the unit defrosting, stop down the street, run a manual defrost, and let it pull back down to set temp

You need to call your insurance company. Obviously its to late to do this, but in the future take a picture of the pulp temperature. Get a probe thermometer and stick it in one of the boxes to see what the temp is, or use a temp gun. Take a picture, if it's not the correct temp tell the shipper, write it on the bills, call the broker and don't pull away from the dock unless instructed to do so in writing.
