Fair enough, I wouldn't want to piss management off either. I do kinda suspect that they would rather the load was delivered on time rather than have you log every on duty minute. Bear in mind that they not be able to overtly say that to you though.
Do they have any way of knowing that you were in the building for all that time?. If they don't then what they don't know won't hurt them and will instead help you.
In time you will eventually learn how your fleet manager and the company operates. There are things that they are likely to look the other way on. Doesn't mean they want you to break rules, just that there are some rules they need to have in place that they themselves would rather not hold drivers to.

Inside a building in a break room and not on the dock is off duty, since you're not in any way responsible for the product while loading or unloading is taking place. If they require you to be present on the dock and verify the load/unload or count the product, then it is on duty.

Nobody here will tell u what u need to do. They don’t want to give advice to do something unlawful. Your logs are on the honor system. They need to look legit when inspected on a random stop days later.
My opinion. You are using too much time logged on duty at shipper. I log exactly 15 mins to get loaded and 15 minutes to get unloaded. I log all other time as sleeper berth. I log 15 minute pretrip, 15 minutes fuel. I log 2-5 minutes load-tire check.
My logs were DOT inspected 4 times in 2017 and they passed every time. My company inspects my logs constantly. No problems. -

I had to call in to safety once before so they can change something in my logs it was a few months back. I was told safety is the only one who can edit them.
