I'd probably look at Giltner Transportation as well. They are definitely deep west of the Mississippi. They go everywhere, I see them most when traveling through Nebraska, Wyoming and that area.

I'm like you -- I think the best trucking is running true 48 state OTR. The problem I've found is that a lot of the companies that truly have that kind of radius are Megas with terminals all over, or pay relatively low to offset the long length of haul, but you could argue it evens out with miles.
As far as halfway respectable pay AND running all 48, WFX, Freymiller, MVT, Schuster, and IWX (Maybe. I know they cover both coasts, but it might be different groups of regional guys.) There's also Holland Enterprises and Magnum. JFI runs west of the Mississippi a ton. Heyl Trucklines runs west of the Mississippi a lot. Calex runs produce from coast to coast, if I remember what @Chinatown said correctly.
I'd say call around the west Iowa, Dakota, Colorado, Kansas, etc. companies and see what they have to offer. Once you get to St. Louis and further east, the incentive to run to the west coast is drastically reduced.
If you're willing to cut out the actual west coast and are content with CO, WY, UT, etc., I would think you'd have a lot more options with more competitive pay, but I agree with you that the coast to coast runs are awesome and possibly worth a pay hit.
As far as lower paying companies that cover lots of ground, there are companies like Stevens, Cedarpoint, and Danny Herman Trucking. CRST covers some ground as well. KLLM runs to Cali, but not a huge volume from what I've heard.
