You fancy guys. We went on a bike ride today (pedal bikes) so we let the Mexicans handle the cooking. They did not disappoint. I raced my daughter to the truck and almost vomited. Overate again.

A lot of times it depends on the meat. Lately when doing steaks, I have been going to the 700 plus range, get that really nice crusty sear on it then letting it sit for a while on the cooler side for finishing.
