    Wow looks like a close one glad you were able to stop, shows how important it is to be looking well ahead of where your driving. Wonder what happened to his tractor seems odd that the farmer would deliberately turn in front of you? :cool:

    You have to use the pink paper for cooking. The white paper has a coating on it that can’t be used to cook with. It does slow down the evaporation process, so it does help keep moisture in the meat.

    this is a pork butt I did that way

    These are St Louis style ribs that were wrapped also. When you grabbed a piece by the bone, they just fell out.

    Looks good. Making me hungry again. May have to plan my next parking stops around a bbq joint. If they have good ones.

    The ribs were about a 4 hour total cook. First 2 hours smoking, then wrap.
