You have to use the pink paper for cooking. The white paper has a coating on it that can’t be used to cook with. It does slow down the evaporation process, so it does help keep moisture in the meat.
this is a pork butt I did that way
These are St Louis style ribs that were wrapped also. When you grabbed a piece by the bone, they just fell out.
