Meatloaf is a relatively simple dish when you compare to Kangaroo pie and pasta bake. Now if you had gone with a shepherd’s pie, that would have moved you up a class with the rest of us.

 

Wallaby is a fine meat but nowhere close to Elk

Never had Wallaby, Elk plenty of times. Guess we need Blair to give a better description of the meat.
Would think they tend to be a bit tough and stringy, probably a real strong game flavor.

 

All depends on the feed — alfalfa and corn field raiders eat really good— the swamp grass and desert scrub feeders not so much
