Potatoes do well in a lunch box cooker. Throw a big one in there and give it about 200 miles and it will be nice and mushy.

Dont sell vienna sausage short. Ill give you two quick ways to enjoy the heck out of our friendly meat in a can......
One, open the Vienna sausage and keep it on the dash in the windshield. Keep it there for a while, depending on the sunlight and tempature of the day. Add some salsa, stir it up in a bowl, and use Doritos to dip it out. Good stuff. It will make you stink up the truck something fierce, but good eatin' nonetheless.
Two, get you a few cans and empty them into a bowl. Take two bags of cool ranch Doritos and crush them until you can call it "powdery crumbles". If you don't have access to a some fresh chopped onions, then add a bag of Funyuns (crushed up), then mix everything together in a little foil loaf pan that fits into your lunch box cooker , spread some ketchup on the whole top part, then let it cook for around 250 miles. Pull it out and enjoy. That is my secret recipe for Mississippi Meatloaf. Again, you'll stink up the truck but its good and beats anything you'll find at a truckstop. It's meatloaf without the hassle of having to store cold meat. The key to the success of good eating in a truck is trying to figure out what ingredients you can use that doesn't involve a freezer or fridge.

Jakaby, That sounds like some #### I would do, lol. Nothing wrong with bulking up on stuff you already eat. I crush up two, or three handfuls of saltines and throw them in the chicken flavor Top Ramen noodles. Do you have any suggestions for Spam?

Spam can be summed up in 4 words- Party In A Can!
I like spam a lot, but my favorite way to eat it is to slice it up and fry it in a skillet with scrambled eggs. I actually carried an electric skillet for a while for cooking things like eggs and sliced spam, but I just got turned off by the mess and having to clean it up. I ended up giving it to a Werner driver a while back.
I'm a big fan of meat loafs and casserole type dishes because I can pick a variety of canned meat and mix it with some flavored potato chips, along with some other stuff and make a good meal out of it. I have made the meatloaf mentioned above with Vienna sausage (my favorite), potted meat in a can, deviled ham, chopped chicken in a can, and also spam. When I've used spam, I always put cheese in it and cook it just like I did with the Vienna sausage. One time, instead of the cool ranch Doritos, I used those big puffy Cheetos instead. It came out great. It didn't look very good, which is why I ended up calling it "s$&t in the box" because the little orange specks turned yellow after being cooked so you can imagine what it looked like. It was still good though. The only meat in a can I haven't tried cooking in my lunch box cooker is anchovies and sardines, and only because it tears my stomach up and I end up doing the duck walk into every Truckstop along the interstates.
One other thing I have done with spam is make spam tacos on the foreman grill. Whenever I'm close to Wal Mart I'll stop and shop for some salsa and lettuce. I always have shredded cheese anyway. Load up some flour fajitas with spam, cheese, and onions, and grill it until its brown, and before its black. Kinda of Inbetween. Add lettuce and salsa afterwards, put some Taco Bell sauce on it ( I load up on sauce packs at every Taco Bell) and your good to go. You won't get better tacos anywhere else north of Laredo, Texas.
When you get out on the road solo, you will find creative ways to feed yourself when you get sick of truck stop food. Make sure you get yourself a lunch box cooker, a mini crock pot ( great for vegetables), and a foreman grill. If you keep those three appliances, you can cook like a casino chef everyday!
